Born in Azogues, Ecuador Executive Chef Manuel Padilla has been involved in Nobu Restaurants from the beginning

He has a thorough understanding of our standards, allowing him to bring the consistency of the brand to Cabo. For him, it is a great honor to be part of the Nobu Family.


When he arrived in Mexico, he and his team went to try local products to assure that they could use the best possible local products in their recipes. Cooking is a passion fueled by his family and his inspiration comes from seeing a happy customer. He always has three top essentials in the Nobu Restaurant kitchen including a sharp (nenox) knife, fresh truffles, and wagyu beef.

For Chef Manuel, Kokoro means putting your heart into everything you do and making it worth it. He shares with us his mantra: “Living with an open mind, knowing and being able to adapt to a life that can change at any moment.”
