Paolo della Corte, an Italian in love with Mexico and the country’s gastronomy, has worked with some of Europe’s most renowned Michelin-starred chefs including, Joël Robuchon, of the 2-Michelin L’Atelier Saint-Germain in Paris; and the highly-rated 5-Star Hotel Palazzo Avino’s Rossellini’s Restaurant 2-Michelin, close to his hometown on the Amalfi Coast of Italy.
